A vegan cauliflower smoothie recipe

If you clicked on this recipe because of sheer curiosity, I don’t blame you. Before I tried putting cauliflower in my smoothie, I was horrified at the thought of tainting my blissful morning elixir with the ghastly taste of a cruciferous vegetable. In trying out this recipe, however, I soon learned that this wouldn’t be the case.

Storing riced cauliflower in the freezer (you can buy it frozen at Trader Joe’s!) is a surefire way of always having access to a healthy vegetable to add to your meals. Cauliflower is low in calories and carbohydrates and contains high levels of fiber, so adding it to smoothies is a great way of adding some great nutritional value without compromising taste (unlike adding spinach, which usually results in your smoothies picking up a stronger, vegetable-y flavor).

In addition, frozen cauliflower adds the DREAMIEST texture ever! It makes your smoothies smooth, frosty and unbelievably creamy. You can’t taste the veggie at all — instead, you’re left with a decadent beverage reminiscent of a milkshake.

Don’t believe me? Try out this recipe and prove me wrong! I bet you’ll end up becoming obsessed with this new holy grail ingredient.

Ingredients:

  • ½ cup frozen riced cauliflower
  • ½ banana
  • ½ cup of your favorite fruit (strawberries and blueberries are especially delicious in this, or you can make it tropical and add mango and pineapple)
  • 1 serving of your favorite vegan protein powder
  • 1 cup water (you can use almond milk, but I find that the smoothie is just as dreamy blended with water … and it also means you can store one less ingredient in your cramped dorm fridge)
  • 1 tablespoon of healthy fat (hemp seeds, chia seeds or almond butter are all great choices!)

Instructions:

Place all your ingredients in a blender and blend! It’s that simple.
