ShenJing Barbecued Goose is a Guangdong style barbecued goose with a history of 700 years. In Chinese, “Shen” means “deep”, “Jing” means “well”, which indicates that the goose was traditionally barbecued in a deep well.  It is very popular among the area of Guangdong.

There is a story behind ShenJing Barbecued Goose: In Qing Dynasty, an official called ZeXu Lin was too anxious to eat or sleep due to the tedious military affairs, so his cook was very worried about his health. One day, Lin’s cook found that there is a dry well surrounded by lychee trees, so he came up with an idea. He made the branches of these lychees trees into coals, put them into the dry well along with the goose. Since the dry well was in an enclosed space, the temperature was kept constant, which made the taste of the barbecued goose surprisingly good. Lin loved the barbecued goose and never got tired of it. Later he named this barbecued goose “ShenJing”, in order to honor the incredible flavor of it.

So why did Lin love the barbecued goose so much? After the goose is barbecued, it is cut into small pieces. The color of the skins is golden and the skins taste very crispy. The meat beneath the skins is tender and the bones have an incredible smell. The locals dip the pieces into a kind of sweet sauce that is made of plums, so the sweet can lighten the greasiness of the goose. Maybe you have had ducks with duck sauce in some Chinese restaurants, goose still has a different taste. The meat of goose is tenderer, skins are thinner and crispier, and they taste less greasy than ducks (so that’s why they are way more expensive than ducks).

So, do try “ShenJing Barbecued Goose” if you come to China, since I’ve never seen any Chinese restaurants that serve barbecued goose in the United States. You will get to know the essence of Chinese food: exquisite, tasty and incredible.
